Organisation of the vineyard: The Domain disposes of 23 hectares of Pinot Noir, 13 hectares of Pinot Gris and 46 hectares of Cabernet Sauvignon, planted at a density ranging from 5.000 to 6.250 plants per hectare. The orientation of the plants is from North to South, on a mix of argil and gravel, placed over a limestone layer. The pruning type is single Guyot. The yield was 8 to/ha.
Winemaking method: The grapes were hand-harvested. Short skin-contact maceration (4 to 6 hours) was used for Pinot Noir and Cabernet Sauvignon and longer skin-contact (12 hours) for Pinot Gris. For Pinot Noir and Pinot Gris, aging was made in stainless steel tanks with bâtonnage, whereas Cabernet Sauvignon was barrel – aged for 4 months in new French oak. 12,5 % < 2 G/L 3,48 6 G/L
Tasting notes: A debut marked by the white fruit sensation – white cherry, white plum, white grape berries. After airing, red fruit notes are also unveiled, doubled by honey, pollen andexotic fruit. The mouthfeel begins on fine roses and cherries, only to develop into passion fruit, pomegranate and fleshy sensation.The fine, perfectly integrated tannins are reflected in the unusual fleshiness of the wine, which balances the high acidity that turns this rosé into a delicacy reserved for gourmet experiences.
Recommended serving temperature: 11ºC – 13ºC. The possible deposits certify the minimal intervention performed on the wine.
